Happy National Pancake Day!!!

I get happy just saying pancake! My knees begin to shake when I think about pancakes! My hands begin to itch when I think of pancakes! Pancakes are universal, you can find pancakes in every country and bottom line pancakes make you smile.

Since it is National Pancake Day, I thought I would tell you about the best pancake I ever had and that was at a recent trip to Maui.

We researched a couple of restaurants and had already been to Mama’s Fish House, Roy’s and Cheeseburger in Paradise and found the Gazebo Restaurant. Let me say I highly recommended all 3 restaurants  I mentioned other than Gazebo so you should definitely go to those as well if you visit Maui.

We arrived at the Gazebo for breakfast around 8:30am and let me say we thought that was early enough but to our surprise there was already a line and they opened at 7:30am. 😦

Took us about 40 minutes to get seated, but let me say it was well worth it and actually the view is fantastic while you wait anyways.

Your view is looking directly into the ocean and we even saw 2 whales bursting water out of their holes in the shimmering Maui waters from a distance and birds singing as the waves made universal music as they pushed up against the shores. True beauty from the heavens!

While looking at the menu, my eyes lightened up as if I just saw a famous celebrity and I screamed in my mind, “White Chocolate Macadamia Nut Pancakes!!”

Wow! I’m pumped.. What evil mad scientist thought about creating something like this?!

This is all I had on my mind and all I wanted to order; besides coffee from all the drinking the night before and the usual bacon and eggs.

This day was all about the designer’s prime choice, the Mona Pancake, The Statue of Macadamia, the Cream of the Crop. I was going to have a meditation seance with this dish and it starts now!

The waitress places this crafty workmanship on the table and because it looks so delicate I didn’t even try to cut it into slices. All I wanted to do is pour the syrup and just dig in.

I looked and saw there were two choices of syrup, maple or coconut. I’ve never tried coconut syrup, so I placed some on my finger and the only way I can describe the taste is to say it this way..

“Have you ever had a Pop Tart and after you placed it in the toaster you pulled it out then took a bite and the filling sticks to your throat as it goes down and the sweetness and flavor is so potent that you could just suck your tongue and swallow a couple of times and you still are engaged in the sweet nectar of that first bite?”

That is how the syrup tasted and that is the experience I had when biting into that luscious masterwork of a pancake. There were white chocolate chips as the grand piano next to the presence of  the modeling whipped cream that had macadamia nut pieces as a back up guitarist and when all of them came together it was a grand fiesta in my mouth! Now that’s live action eating!!

The richness of the pancake with the sweet pop of the chocolate chip, the nutty taste of the nuts and the light cloudy bite of the whipped cream was out of this world!

I promise you that you WILL NOT be disappointed. It is a ‘must go’! Nothing to it but to do it!
