The Acadians – Frenchmen who settled in “Acadie”, the wilds of Nova Scotia – were forcibly driven out of Canada in 1755 by the British and shipped off to regions as disparate as Massachusetts, the West Indies, and Uruguay. This exile was called Le Grande Derangement (“the great trouble”). After returning to France, one of the largest groups of exiles landed on the shores of South Louisiana. Over time, more waves of Acadians reunited with fellow refugees, and they became known as “Cajuns”.
Acadians were hunters, farmers, and fishermen well-versed in the art of living off the land. They were given land grants upriver from New Orleans and moved into the swamps, bayous, and prairies of Louisiana to start farms and ranches. Unlike the cosmopolitan Creole cuisine, which is largely thought of as more refined and seafood-centric, Cajun food leans toward the rustic and rural, featuring wild game, pork, beef, and cured and fresh sausages.(langloisnola.com)

I need something exciting and adventurous to bite into..
Hmmmmm..Something fulfilling and something that makes my mind journey to another place other than work…
I got it!!
The light bulb turns on and my tongue begins to water as an image of an enticing chicken patty in-between two buns squeezes itself into my mouth and massages every inch of my palate..
Where can I find this exotic temptation that has been envisioned in my mind? The one and only St. John’s Bar and Grill!
This place is not a mystery anymore since I wrote about their burgers before in my blog post about Bleu Cheese Bacon Burgers so check that out when you can.
However, that was their hamburgers and not this new found treasure in their chicken sandwiches! Let’s dive in and talk about it..
After the light bulb came on, my fiance and I decided to meet for lunch at this cavern of sinful temptation. After browsing the wide selection of chicken sandwiches, my body quivered when I saw the Cajun Chicken Sandwich so I knew the road I wanted to travel this day.
A road of spicy delight and satisfaction on a road to New Orleans! Let’s party!
I ordered the Cajun chicken sandwich (with added bacon of course) then they hand me a buzzer and then I frantically await my order.
I had only ate an apple this morning so I felt like my insides were eating me from within and I needed to bite my fangs down into something juicy and meaty.
My buzzer goes off and I rush to the counter to pick up my sandwich next to a bunch of meat vampires next to me all drooling and moving their feet in place to eagerly grab their meal of temptation.
They hand me this precious figure of excellence and I sit down and look at the this artwork of divine creation and see nothing but beauty in front of me!
Char-broiled chicken breast seasoned with colorful tasty salsa, Cajun spices winking at me with Pepper Jack cheese and a chest full of green lettuce!! Time to dive in to this chick!!
Crunch!!!
The chicken is ripe with flavor and screams perfection with every bite!!
The Cajun spices explode your palate and then a cool down with the lettuce and salsa!
Kabooooooom!!
The sweet pork flavor of this crunchy bacon causes a second explosion in the mouth!
Kaploooooow!!
Bite after bite there is non stop satisfaction until the mission is complete!! True live action eating! Good job St John’s!
