Fusion Cuisine is actually not new. It has been around for a couple of decades. Chefs started to merge cuisines around the ’70s. Culinary legends like Wolfgang Puck among others introduced this concept. He actually laid down the foundation for this technique. He is the brains behind the common culinary fusions and pairings. An example of which is the fusion of European cuisine with Asian cuisine, commonly referred to as Eurasian cuisine. This was easy for Chef Puck because of his knowledge of both cuisines. He was originally trained in Europe, but he is thoroughly familiar with the Asian dishes. Eurasian basically combines two cooking techniques and dishes, so you can end up with poached tofu, for example, which generally mixes European and Asian method of poaching.

Over the years, fusion cuisine restaurants emerged all over Europe. Many of these restaurants were established in urban areas. In fact, you would likely find these restaurants still offering the same mixed cuisines. Urban areas are actually prime spots for fusion cuisine restaurants since these are also the areas where cultural integration is more predominant. Some say Hawaii is like Heaven on Earth..

Most people take frequent vacations there and love to talk about the great views, beaches and cultural food.

You heard of Hawaiian fusion? Well if you haven’t, I know the spot..

Let’s talk about it..

So it’s my buddy Mike’s birthday and his wife wanted to host a celebration brunch in an exotic atmosphere with unodinary grub.

Where in the world could this be?

1621 Bistro of course!

Hawaii meets California’s finest..

Fried Chicken and Waffles, loco moco, crab cakes with the soothing sound of Hawaiian jams and decor surrounding you.

We grab our reserved table for 20 and immediately jump in line for these wonderful heavenly desired concoctions served as a buffet.

I grab all kinds of grub..

Plump sausages, crap cakes on top of an English muffin, Apple crisp bacon..

Oh me oh my.. I’m excited now!

I hear a whisper in front of me..


The Hawaiian resembling chef asks me if I would like a serving of eggs to add to my crabcake or Chicken and Waffles.

“Yes please..”

As my leg begins to shake in anticipation..

I grab the plate and my soul starts singing..

“And I’m overwhelmed..You bring Heaven to bring Heaven to Hell..Oh yes you doooo.. You are more than a blessing..”

I add some hot sauce and syrup to that bad boy and time to dive in..

Knife in hand..fork in the other..

“Get in my body!!”

I take a bite..


All kinds of flavor hit my palette..

Succulent, sweet, tender chicken with slight spice combined with a crisp, but soft combination of the waffle made a delightful masterpiece.

I bite into the sausage..


Juices burst in my mouth like a dam broke.

Disrespectful flavor hits my mouth at high velocity. Massive flavor and super tasty!

Back to the chicken and waffles..


Crab cake time..


The sweetness of the crab meat and perfect crunch embracing it made it a delectable masterpiece.

I call over to my wife to make sure she can calm me down if I go into flavor city overload..

She yells across the table, “Try this loco moco!!”

With my hand shaking with excitement from all the wonderful grub already, I grab her plate.

I get into a daze and smell fresh water, I hear seagull sounds and drums..

“How did I arrive to the Hawaiian Islands….Am I dreaming.. What is going on?”

I snap out of it..

I look at the plate and see a beautiful setting of a gorgeous egg doing a Hula dance atop of a voluptuous beef patty, posing on a beach bed of seasoned rice..

Oh she wants me and she wants me now..

I’m going in..


An eruption of flavor hits my mouth..

The combination of the egg with the perfectly seasoned succulent beef makes you salivate as you chew..

The rice calms you down, but gives your mouth a massage at the same time with it’s tasty composition.

Another bite of the waffles..


More sausage..


More crab cake..


More loco moco…

Baaaang! Poooow! Booooom!

Nothing but true live action eating! Great job 1621!
