Did you know….

The history of enchiladas can be found pre-Colombian times when the Mayas first invented the tortilla. In the time of the Aztecs, they would wrap tortillas around small fish or other bits of meat. There is also evidence that they would fry the tortillas in grease, then put them on a plate and pour salsa over the top, add cheese, then another tortilla, cheese, salsa and so on. They would then top the stacked enchilada with a fried egg and some lettuce.

The history of enchiladas is actually quite interesting. It’s progressional history, I might say. We have taken an ancient dish, gave it a name; (in 1885, the word enchilada first appeared in print, meaning “chili filled”) and transformed it. We now stuff tortillas with cheese, shrimp, beef, pork, and the most famous of all, the chicken enchiladas. We have taken something from the past, and brought it through to the future. The Tex Mex enchiladas that are drowning in red sauce are a far cry from the Aztec times, but the enchilada has survived anyway.(claimjumper.com)

You probably have a few favorite Mexican restaurants that you dine at on a regular basis; and you even have your favorite dishes that you order regardless of the Mexican dinner location.

Maybe you like dry burritos, or wet burritos, or taquitos or tacos…

Bottom line, Mexican food is delicious and here in the Bay Area we have many restaurants to choose from and you will see me write about my fav’s here and again.

Today we will talk about one of these restaurants close to my stomachs heart and that is Mendoza’s Restaurant in San Jose, Ca.

Did you know….

There is much evidence to suggest that enchiladas come from the Mayans. The dish was first associated with the region of Mexico by the Yucatan in pre-Columbian days. Corn tortillas were a staple of the Mayan people and there is evidence that the first enchiladas were tortillas that had fish rolled in it. The enchilada is similar to papadzules a traditional Mayan dish, which also comes from the Yucatan region. In this dish, corn tortillas are dipped in pumpkinseed and rolled around chopped boiled egg. It is then smothered in tomato sauce. This dish was primarily food for the nobles and was said to be served for special occasions.

When the Spanish Conquistadors made their way to the Western Hemisphere they documented the variety of foods the indigenous people ate. Tortillas, made from flattened corn bread were originally called tlaxcalli, however it was the Spanish conquistadors that named it the tortilla. Throughout the later centuries, the Mexican people continued to enjoy this dish and the enchilada can be found in a wide variety of cook books dating all the way back to the first Mexican cook book published in 1831 called El Cocinero Mexicano.(historyofthings.com)

Did you know….

The burrito made its way into the US in the 1900s. The first mention of a burrito on a U.S. menu was in the 1930s at the El Cholo Spanish Café in Los Angeles, though burritos had likely been making the rounds in the states before then. California is still well-known for its burritos, with the Mission burrito—arguably the most popular style of burrito in the United States—originating in San Francisco. The Mission burrito is wrapped up in a tortilla and then again in aluminum foil—this is the sort that is commonly served at restaurants like Chipotle, Qdoba, and Freebirds.

Once the US got hold of it, the burrito started to cross cultural boundaries. Now there are burritos made with Thai chicken or Chinese pork. Then there’s the breakfast burrito, a tortilla stuffed with eggs, potato, and bacon. The breakfast burrito fad, which started catching on around 1975, found its way into mainstream fast food restaurants like McDonald’s, Sonic, and Hardee’s by the 1990s.
