Did you know….

The earliest American chicken and waffle combination appears in Pennsylvania Dutch country during the 1600’s, when home cooks made waffles and topped them with pulled chicken and gravy. A different, decidedly soul food-inspired approach to the pairing worked its way into popular culture much later with the opening of Wells Supper Club in Harlem, New York. The restaurant, known simply as “Wells” to regulars, opened in 1938. Wells became a late night hotspot for jazz musicians, who would stop by late at night after their various gigs. The musicians, arriving too late for dinner but too early for breakfast, enjoyed the appetizing compromise of fried chicken and waffles. Before long, Wells was frequented by the likes of Sammy Davis Jr. and Nat King Cole (who held his wedding reception there).

Wells managed to inspire a nationwide trend. In 1976, a Harlem native named Herb Hudson opened a Los Angeles restaurant dedicated exclusively to the pairing: Roscoe’s House of Chicken and Waffles. Hudson’s Motown connections helped to launch the restaurant, making it a popular destination for music industry professionals and performers in the Los Angeles area. Over the years, the restaurant has become an established part of the Hollywood food landscape. Roscoe’s is so well known, in fact, that President Obama took time out of his busy schedule in 2011 to make an unscheduled stop there. In case you’re curious, he ordered the “Country Boy,” Number 9– three wings with choice of waffle, potato salad or French fries. Here’s hoping he chose the waffle.

Gladys Knight, a patron of the original Wells, started her own chain with gospel singer Ron Winan in 1996—Gladys and Ron’s Chicken and Waffles. Other soul food restaurants feature chicken and waffles on the menu, including Lo-Lo’s in Arizona and Lucky J’s in Texas. Thomas Keller’s famed restaurant Ad Hoc in Napa has been known, on occasion, to serve lemony fried chicken with crispy and delicate waffles. And in Harlem, Melba’s Restaurant serves up eggnog waffles with strawberry butter and buttermilk fried chicken. While it may sound strange, Melba’s combination is so tasty that she beat out celebrity chef Bobby Flay in a chicken and waffles “Throwdown” on Food Network.(pbs.org)

Whether it’s lunch time, dinner time or time for a drink and appetizers Elephant Bar has a great atmosphere and tasty vittles to enlighten your palate.

My fiance and I have been here multiple times over the years and they have never let us down so we keep coming back.

We used to come strictly for the Shrimp and Chicken Jambalaya but today we wanted to try something different so time to take a journey to dive into the abyss of exciting tasty creations.

Since we have dined at the Elephant Bar for many years off and on we have noticed changes in the menu here and there but today we saw an entirely new menu.

There were so many choices it blew my mind and it actually made it difficult to order. My mind was on a roller coaster ride and I needed to settle it down. I hope they tone the menu down to what they are experts in so we can get the best of the best only on the list.

Anywhooo… I figured what better way to enjoy a sunny afternoon than to have a rack of ribs winking at me! You can never go wrong with that choice!

So I go with the St. Louis-style half rack, double basted ribs with tropical Kona BBQ sauce and caramelized apples with a choice of two sides. The sides list was huge so I just stuck with fries and a salad but keep in mind you have many items that will fit your fancy.

Once I received the plate, the aroma of delicacy and sweetness fill the air. I take a bite and the meat is almost falling off the bone. The pork is so tender it shredded in my mouth before I could even start chewing.

Every bite gave me a sensation of elegance and happiness! True live action eating!

Now to jump into my fiance’s dish which I had to taste to make sure I can tell you guys about it.  🙂

She ordered the Cajun Chicken dish which was a grilled chicken breast with Cajun spice, Bourbon street rice with Andouille sausage and sautéed spinach.

The flavor took me on a Creole ride to satisfaction and bliss! The combination of Bourbon street rice and Andouille sausage was borderline jambalaya then stepping into the bite of the savory spinach brought a calm to this wonderful light tasty inferno in your mouth. Good job Elephant Bar!

Cinco de Mayo, ( Spanish: “Fifth of May”) , also known as the Anniversary of the Battle of Puebla,  national holiday in Mexico in honour of a military victory in 1862 over the French forces of Napoleon III. When in 1861 Mexico declared a temporary moratorium on the repayment of foreign debts, English, Spanish, and French troops invaded the country. By April 1862 the English and Spanish had withdrawn, but the French, with the support of wealthy landowners, remained in an attempt to establish a monarchy under Maximilian of Austria and to curb U.S. power in North America. On May 5, 1862, a poorly equipped mestizo and Zapotec force under the command of General Ignacio Zaragoza defeated French troops at the Battle of Puebla, southeast of Mexico City; about 1,000 French troops were killed. Although the fighting continued and the French were not driven out for another five years, the victory at Puebla became a symbol of Mexican resistance to foreign domination. Its’ Cinco De Mayo Mi Amigos and I am happy to celebrate with my Mexican brothers and sisters to do cheers in celebration on this great day!

What better way to celebrate than some delicious Mexican cuisine with an ice cold margarita. Nothing to it but to do it!

During this day every year, I make sure to stop by  the nearest Mexican restaurant and indulge in some Mexican heritage cuisine. I won’t be caught dead eating anything other types of food to make sure I take part in the celebration.

None the less, Mexican food is fantastic any day you choose it! So I am glad to oblige!

Did you know….

Tidbit #1:  In 1492, Christopher Columbus discovered… barbecue?  Well, his love for it anyways.  In his log, he noted that a giant “serpent” (speculatively an iguana) was prepared by natives using an outdoor wooden fire device. The Spanish word for these devices, “barbacoa,” was actually the Europeans’ interpretation of the original Taino name.  Oh, and Columbus’ reaction to this crunchy amphibian treat? It simply “taste like chicken.”

Tidbit #2:  George Washington’s barbecue parties were better than yours.  We’re talking 48 bottles of fancy French wine better.  We know, it’s shocking, but Mr. Washington did in fact go hard.  In a diary entry from 1769 (don’t worry, that’s before he was President), he writes that he “Went in to Alexandria to a Barbecue and stayed all Night.”  Translation:  George partied too hard and passed out on the couch.  It’s ok, George, we’ve all been there.

Tidbit #3:  Forget cars and lightbulbs– in the 1920s, Henry Ford and Thomas Edison popularized charcoal. Along with EB Kingsford, they teamed up to create the first wide-spread, commercially manufactured charcoal briquettes the world had ever seen.  Scrapped wood and sawdust from Henry Ford’s auto plants in Detroit were recycled and transformed into easily lit charcoal, which popularized the barbecue for everyone from flappers to rag-a-muffins. This hypothesis about the taco comes from the fact that the first type of taco was “taco de minero,” which translates to mean miner’s tacos. Also, have you ever realized that taquitos look similar to a stick of dynamite? Taquito is a Spanish word that translates to small taco. THE TACOS!! The meat was so tasty I would say anything on the menu!

Now everyone claims they have great tacos but everyone can’t stand up to the test.

I’ve eaten tacos from taco trucks, I’ve had them in front of dance clubs on the street, I’ve had them at home and even bought them on a corner from a lady named Tatiyana with a side order of homemade tamales.

There are some core differences in a great taco that I have grown to know. That is the flavor and tenderness in the meat, the salsa and the toppings.

A great taco will not be over saturated with all kinds of toppings but contain delicious flavor bursting meats including some onion, a little lime, a little cilantro and a tasty salsa sitting on top of a corn tortilla.

Every item needs to stand on its own, from the tortilla, to the meat, to the onion and lime.

If all are not in the realm of perfection then the entire taco could be ruined.

I’ve had tacos where the meat was juicy and flavorful but the tortilla was hard and crumbling , or the tortilla and meat were tasty but the salsa was bland or way to spicy.

Speedy Tacos deserves the award of perfection, the salute of a general, the worship of Mexican food in this land of the Bay Area! Let’s talk about it…

Cobb salad was created at the Brown Derby Restaurant in Hollywood.

As with many “how this began stories” We don’t know how much is actual fact, but here is the official story from the Brown Derby themselves.

“One night in 1937, Bob Cobb, then owner of The Brown Derby, prowled hungrily in his restaurant’s kitchen for a snack. Opening the huge refrigerator, he pulled out this and that: a head of lettuce, an avocado, some romaine, watercress, tomatoes, some cold breast of chicken, a hard-boiled egg, chives, cheese and some old-fashioned French dressing. He started chopping. Added some crisp bacon — swiped from a busy chef.

“The Cobb salad was born. It was so good, Sid Grauman (Grauman’s Chinese Theatre), who was with Cobb that midnight, asked the next day for a ‘Cobb Salad.’ It was so good that it was put on the menu.(kitchenproject.com)

The precise origin of the modern burrito is not known. Burrito De Pollo, As long as it is with their shredded chicken it will be good

Every time I go to a Mexican restaurant and I order a wet burrito there is usually some kind of red chili/enchilada sauce that is used.

El Caminito is the only place I know if where the wet burrito has a light brown sauce over it that is so divinely created and tasty you think it was created in the heavens.

They have a shredded chicken so tender that it almost tastes like there is butter mixed in with it. Anywhere else the chicken would have been fat chunks of sliced chicken.

They also add perfectly cooked refried beans and cheese to the burrito with cheese blended in with the sauce on top of the burrito as well.

Each bite consists of this delicate shredded chicken and this sauce that just sparkles in your mouth as a delicious treat to your palate. It is a good size portion and will leave you in a comatose so be ready to take a nap after. 🙂

In 2007 Israeli scientists at University of Haifa uncovered evidence that early humans living in the area around Carmel, about 200,000 years ago were serious about barbecue. From bone and tool evidence, these early hunters preferred large mature animals and cuts of meat that had plenty of flesh on them. They left heads and hooves in the field. Three of their favorites were an ancestor of cattle, deer, and boars. From burn marks around the joints and scrape marks on the bones, there is evidence that these cave dwellers knew how to cook.

Early barbecue cooking implements will likely never be found because they were probably made of wood. The first meats were probably just tossed into a wood infereno.

They quickly learned that the food tasted better if the food was held above or to the side of the fire. According to barbecue historian Dr. Howard L. Taylor, the first cooking implements were almost certainly “a wooden fork or spit to hold the meat over the fire.

Eventually they built racks of green sticks to hold the food above the flames, and learned that the temperature was easier to regulate and the flavor better if the if they let the logs burn down to coals before the meat was put in place.(amazingribs.com)

The dish Paella is said to to be a perfect union between 2 cultures from Spain , the Romans, for the pan and the Arab, that brought rice.

There is an old story of how the Moorish kings’ servants created rice dishes by mixing the left-overs from royal banquets in large pots to take home. It is said by some that that word paella originates from the Arab word “baqiyah” meaning left-overs.The term Paella actually refers to the pan that it is cooked in. All the way back to the ancient Sanskrit language the term Pa means …to drink, and the Roman culture from the latin made words like Patera, Patina , Patella which could mean a container to drink, or perform other culinary functions.(kitchenproject.com)
