Did you know….

There are two generally accepted Buffalo wing origin stories and they both involve Teressa Bellissimo, co-owner of the original Anchor Bar in Buffalo, New York. The Italian restaurant and bar was founded in 1939 by Bellissimo and her husband Frank Bellissimo, but it would take two decades before Anchor Bar would make its mark in food lore. The first story comes courtesy of Frank Bellissimo and takes place on an undetermined date in the 1960s. According to Frank, the culinary innovation happened when the restaurant received an incorrect shipment. Instead of getting the typical chicken backs and necks for use in Teressa’s famous spaghetti sauce, they got wings. “[The wings] were looking at you, like saying, ‘I don’t belong in the sauce,’” Frank recalled in a 1980 New Yorker article. Not wanting to waste perfectly good chicken, Frank asked Teressa to try to make something new with the unwanted ingredient. She cut them in half, deep-fried them and dunked them in hot sauce. The famed appetizer was born.

Dom Bellissimo, the couple’s son, later disputed this story and, instead, gave a more detailed version of events. Bartending late one Friday night in 1964, Dom wanted to treat a couple of regulars to a late-night snack. Acknowledging that this was at a time that “Roman Catholics still confined themselves to fish and vegetables on Friday,” Dom asked his mom in the kitchen to whip up something special to be eaten at exactly the stroke of midnight, turning Friday night into Saturday morning. Taking the leftover chicken parts, which were often wings, Teressa chopped them in half, deep-fried and poured hot sauce on them. Serving it with celery and blue cheese dressing from the restaurant’s house salad, it was love at first taste for the barflys. Word got around and, within weeks, the “Buffalo wing” was the pride of the city.  (foodandwine.com)

The earliest American chicken and waffle combination appears in Pennsylvania Dutch country during the 1600’s, when home cooks made waffles and topped them with pulled chicken and gravy. A different, decidedly soul food-inspired approach to the pairing worked its way into popular culture much later with the opening of Wells Supper Club in Harlem, New York. The restaurant, known simply as “Wells” to regulars, opened in 1938. Wells became a late night hotspot for jazz musicians, who would stop by late at night after their various gigs. The musicians, arriving too late for dinner but too early for breakfast, enjoyed the appetizing compromise of fried chicken and waffles. Before long, Wells was frequented by the likes of Sammy Davis Jr. and Nat King Cole (who held his wedding reception there).

Wells managed to inspire a nationwide trend. In 1976, a Harlem native named Herb Hudson opened a Los Angeles restaurant dedicated exclusively to the pairing: Roscoe’s House of Chicken and Waffles. Hudson’s Motown connections helped to launch the restaurant, making it a popular destination for music industry professionals and performers in the Los Angeles area. Over the years, the restaurant has become an established part of the Hollywood food landscape. Roscoe’s is so well known, in fact, that President Obama took time out of his busy schedule in 2011 to make an unscheduled stop there. In case you’re curious, he ordered the “Country Boy,” Number 9– three wings with choice of waffle, potato salad or French fries. Here’s hoping he chose the waffle.

Gladys Knight, a patron of the original Wells, started her own chain with gospel singer Ron Winan in 1996—Gladys and Ron’s Chicken and Waffles. Other soul food restaurants feature chicken and waffles on the menu, including Lo-Lo’s in Arizona and Lucky J’s in Texas. Thomas Keller’s famed restaurant Ad Hoc in Napa has been known, on occasion, to serve lemony fried chicken with crispy and delicate waffles. And in Harlem, Melba’s Restaurant serves up eggnog waffles with strawberry butter and buttermilk fried chicken. While it may sound strange, Melba’s combination is so tasty that she beat out celebrity chef Bobby Flay in a chicken and waffles “Throwdown” on Food Network.(pbs.org)

Oceanside is situated on the Pacific Coast named quite literally because of its location.   Its history begins in the agriculture-rich San Luis Rey Valley, which was first explored by the Spanish Explorer Portola in 1769, followed by the founding of the Mission San Luis Rey de Francia in 1798.

The Mission, with its vast fruit orchards and cattle raising activities included a large population of Native Americans. The Indians who were gathered at the Mission were called “San Luisenos” by the Franciscans, later shortened to “Luisenos.”  Indians were instrumental in building the Mission compound as they provided the labor.  Mission San Luis Rey was the largest building in California when completed and was the most prosperous of the missions, earning the name “King of the Missions.” (oceansidechamber.com)

Chilli Chicken, Chowmein, Fried Rice with Manchurian, the list goes on… And as our mouth waters, we wonder: are these scrumptious creations Chinese or Indian? Truth be told, this newfangled cuisine coined as Indian Chinese actually exists. It’s true, it’s even featured on Wikipedia. But contrary to popular belief, it isn’t all that trendy. Desi Chinese actually dates back to a few hundred years ago created by the small Chinese community from the Hakka region that settled in Kolkata in the late 19th century. And before you knew it, this version of “Chinese” food had tickled the taste buds of people all over India adopting it in their own way, from Chinese Bhel Puri to Chinese Idli, spring rolls in canteens to momos on the streets.

So what really is Indian Chinese? Simply put, it is the Indian adaptation of Chinese cooking techniques and seasonings with a unique tadka. It’s aimed at pleasing our desi palate, with a larger offering of vegetarian dishes of course. Yes, Chinese food is the most popular foreign cuisine in India surpassing Italian or Thai. This is why a majority of restaurants dedicate a section of their menu to Chinese food. And this is not just the case in India. People across the world, especially in Malaysia, Singapore and North America, surprisingly relish this cuisine to no end (and who can blame them?).

Fusion Cuisine is actually not new. It has been around for a couple of decades. Chefs started to merge cuisines around the ’70s. Culinary legends like Wolfgang Puck among others introduced this concept. He actually laid down the foundation for this technique. He is the brains behind the common culinary fusions and pairings. An example of which is the fusion of European cuisine with Asian cuisine, commonly referred to as Eurasian cuisine. This was easy for Chef Puck because of his knowledge of both cuisines. He was originally trained in Europe, but he is thoroughly familiar with the Asian dishes. Eurasian basically combines two cooking techniques and dishes, so you can end up with poached tofu, for example, which generally mixes European and Asian method of poaching.(multiculturalcookingnetwork.wordpress.com)

Major crawfish boils are held by churches and other organizations as fundraisers throughout the spring. Tulane University holds an annual “Crawfest” in April, and the University of New Orleans holds an annual crawfish boil for all students at the end of the spring semester (Students unwinding on Crawfish and Unprecedented Fun—SUCAUF). Of course, food is influenced by history as much as vice-versa, and the French Revolution was no exception. The birth of the Republic of France laid the foundation for the modern restaurant to flourish. According to Larousse Gastronomique, the French culinary encyclopedia, although taverns, inns and cafés had served food and drink to the public for centuries, the first restaurant as we know it was opened in around 1765 in Paris by a bouillon seller named Boulanger. At the time, clear soups such as those Boulanger sold were considered restorative; hence the term “restaurant.” However, as the encyclopedia explains, “the first Parisian restaurant worthy of the name was the one founded by Beauvilliers in 1782 in the Rue de Richelieu, called the Grande Taverne de Londres. He introduced the novelty of listing the dishes available on a menu and serving them at small individual tables during fixed hours.”

Following the revolution, the abolition of the guild system that controlled who could be a butcher, baker or cheesemaker and how they did their jobs made it easier to open restaurants. Also, since so many aristocrats fled or were executed, their former cooks and servants had to find new employment. I know I’m posting this as a belated New Year wishing, but how could I post this before I can even celebrate the New Year my silly humorous friends.

Anywho..

We non Asian American’s may not celebrate in the full heart of the meaning of Chinese New Year but we definitely try.

Being that my wife is Chinese, it makes me personally try to celebrate it even harder.

What better way to celebrate Chinese New Year than with unique authentic  Chinese food from Hong Kong.
