Did you know….

Most Americans love Chinese food, whether dining in a restaurant or from a slew of those little, folded white takeout boxes with the wire handle. However, the Chinese food found in most casual Chinese restaurants in the U.S. is very far removed from the authentic cuisine eaten daily by most people living in China.

There are many differences between authentic Chinese cuisine and Westernized Chinese food. From ingredients to cooking methods to popular dishes, the differences are numerous. In general, Westernized Chinese food is considered to be more bland and fattening than authentic Chinese food.

While you can likely find authentic Chinese restaurants or authentic dishes in restaurants around the country, most U.S. Chinese restaurants offer Westernized Chinese food. While Westernized dishes are far removed from the authentic dishes they once were, some Western Chinese food dishes are actually a complete invention!(restaurants.com)

Chinese food is a great tasty exotic meal for those that are used to eating hamburgers and hot dogs all day.

Most American’s are used to eating the sweet and sour pork, egg rolls and Kung Pao chicken but there is a distinct difference from eating the Westernized version versus the Authentic version.

I have to say that I like both but sometimes I actually like the Westernized versions better. The way the food is made in the Westernized versions tend to have more flavors that us Americans are adapted to.

However, once you get your taste buds adapted to the Western version and you want to try food more fresh and modern, then the Authentic version is the way to go.

Ma’s is a great place to eat some Authentic Chinese food!

Did you know….

The history of the beginnings of Chicken and Waffles is a perplexing one.  No one is really sure of its origins.  One of the original theories claims that Thomas Jefferson brought a waffle machine to the US from France in the 1790’s, thus beginning a waffle craze (even though the Pilgrims brought it to the New World back in the early 1600’s, we guess Tommy really sparked the interest).

Soon after, being embraced by the African American community, Chicken and Waffles began appearing in cookbooks (although, curiously, it did not appear in the first cookbook written around 1880 by a Black former slave called What Mrs. Fisher Knows About Old Southern Cooking by Abby Fisher).  The Pennsylvania Dutch (the first Germans to have settled in the US) have been pairing chicken with waffles probably before Thomas Jefferson was a twinkle in his mother’s uterus.

 Instead of frying their chicken pieces, the PA Dutch version uses shredded pieces of boiled or roasted chicken on top of waffles and top it with lots of creamy gravy instead of hot sauce and syrup.  You may think this either looks like sick on a waffle or, possibly, chicken pot pie over a waffle. The final and most common origin is that Chicken and Waffles began in the 1930’s during the Harlem Jazz hayday, specifically at a place no longer in existence called Wells Supper Club.

When the Jazz musicians walked into Wells after a long night of playing, they wanted a combo of dinner and breakfast (dickfast?  dinfast?) and the staff created the crispy, crunchy, salty, sweet combo we love today. (weareneverfull.com)

Did you know….

The 1960s were the ideal time for sushi to make an appearance on the dining scene. World War II ended nearly a generation before, and young gourmands were ready to be introduced to a totally unique cuisine. While the appeal of raw fish and cold rice might have been lost on their parents, cosmopolitan twenty-somethings sought out new foods. That was especially true in swinging Southern California, where the nation’s first sushi restaurant opened in 1966.

Named Kawafuku, the restaurant was located in the Little Tokyo section of Los Angeles. It wasn’t just a sushi joint, though. The bottom floor was a Japanese restaurant, serving more accessible dishes like teriyaki and tempura dinners. But the top floor was a sushi bar, with a sushi master named Shigeo Saito brought from Japan to help introduce diners to the intricate delicacies of traditional sushi. Saito’s wife was the only waitress at the bar, and together they presided over a bustling hotspot in the Los Angeles dining scene.(history.com)

Did you know….

The earliest European settlers were looking for quick wealth so agriculture in the South didn’t take off until African farmers were brought here. African Americans brought seeds of collard greens, peas, okra (kumba), yams, watermelons and sesame (benne). They used the same farming techniques they had learned in Africa, creating a surplus of crops that became the basis for traditional Southern Hospitality.

The rural South of the seventeenth and eighteenth centuries produced few cities outside of ports like Baltimore, Charleston, and New Orleans. Travel was difficult. Lonesome homesteads and plantations were far apart. Guests expected to visit for days if not weeks. Not only did they need to rest, but they brought news and entertainment to isolated families. Chickens and pork were served in every possible fashion. Salted, smoked country hams were boiled and baked and served with beaten biscuits. Greens and their potliquor were served with cornbread. Desserts featured ambrosia, trifles, sweet potato and pecan pies. Barbecues, and fish feasts drew distant neighbors together. Blending different cuts of meat to make a better burger is not new, according to Kenji López-Alt, managing culinary director of Serious Eats, Harlem, NY. But it is becoming more common and also something that many culinary professionals are using to create a name for themselves.

George Motz, author of “Hamburger America”, a state-by-state guide to some of the best burger eateries in the country, has taught a course on hamburgers at New York Univ. and Princeton, and consulted for many hamburger restaurants. He explains that the concept of blending different cuts of meat, or even different species, to make hamburger has been going on forever. “But no one really took note,” he says. “Only recently have Americans started taking the hamburger more seriously.”(foodbusinessnews.net)

It’s Saturday and I am excited to be able to enjoy the day and get this weekend started!

Usually I would try to go hiking or maybe indulging myself in a nice breakfast at home or at a restaurant; but today was an exciting day as my family and I auditioned for Family Feud.

We had a chance to play a few fake rounds with questions just like the show and also got a chance to be on a commercial for KCBW Channel 12. True live action living!

The location of the audition was really close to one of my favorite restaurants of all time so I made sure to bring my family to enjoy this breathtaking experience.

Ever since I engulfed myself in the wonderful world of Food Network Television, I have found myself lusting over the great tasting sensations that I see during the shows and envision those fantasy imaged meals in my mouth that those wonderful chefs portray. One of the shows I like to watch on the Food Network is The Great Food Truck Race.

Really cool show if you haven’t seen it and it introduces you to the world of the Food Truck Extravaganza! This world is a realm of divergent creations of foods that you may be used to eating but it involves a twist to what you do not commonly order on a regular menu. Well actually, those are the illustrious ones; you will find some trucks that offer a menu familiar to the eye but those I tend to pass up since I can eat that type of food anywhere.

From the colonial period through the early 1800’s, African slaves were doing most of the cooking in Southern kitchens. At that time, chicken was considered a prestigious food within the African American community, and it was more expensive than some other meats. Enslaved cooks would make fricassee recipes from the popular cookbooks of the time period, or they’d take it upon themselves to fry the chicken in the way they knew best. When the Civil War began and men left their homes to become soldiers, fried chicken took on a new significance. The frying process made chicken less prone to spoilage, allowing women to send it to soldiers fighting in the battlefield.(pbs.org)

Waking up on a Saturday morning is a joy in itself; especially in San Jose, California where the weather is getting similar to Hawaii weather on a year round basis. Is it this ozone layer stuff we keep hearing about or just luck or the expensive cost of living out here? 🙂

Whatever the reason, Virginia and I love waking up and enjoying the weather by either going out for breakfast at one of our favorite breakfast restaurants in the area; Bill’s Cafe (any location in Santa Clara County) or Mil’s Diner in Milpitas, Ca.

We usually love to binge at a restaurant weekend after weekend until we get tired of it and in between those weekends I will usually cook a magnificent breakfast myself for us.

This Saturday we chose to go to Mil’s Diner since it was nice out and since we have engulfed ourselves with Bills Cafe for months rather than cook at home. We needed to get on the road early to go to Vallejo, Ca to pick up Virginia’s mom to go to Davies Symphony Hall for a Chinese New Year Celebration in San Francisco so Mil’s was the best choice since it was on the way.

When we entered, we noticed familiar faces of the cooks and waiters since we used to go there for years and we noticed upgrades in designer colors, furniture and added items on the menu. We noticed that they added Ribeye steak and Fried Chicken and Waffles.  We both smiled with excitement and I was ready to dig my fangs into a sweet succulent piece of chicken with honey drizzled over it with hot sauce dripping and leaking on its sides.
