Did you know….

Big Sur is located along Scenic Highway One approximately 150 miles south of San Francisco and 300 miles north of Los Angeles. Historically, the name Big Sur, was derived from that unexplored and unmapped wilderness area which lays along the coast south of Monterey. It was simply called El Sur Grande, The Big South. Today, Big Sur refers to that 90-mile stretch of rugged and awesomely beautiful coastline between Carmel to the north and San Simeon (Hearst Castle) to the south. Highway One winds along its length and is flanked on one side by the majestic Santa Lucia Mountains and on the other by the rocky Pacific Coast.

The scenic qualities and the natural grandeur of the coast which result from the imposing geography, the rich vegetative compositions, and the dramatic meetings of land and sea are the area’s greatest single attraction to the public. Big Sur has attained a worldwide reputation for its spectacular beauty. Hiking, backpacking and scenic driving are major recreational activities.(bigsurcalifornia.org)

Korean Marinated BBQ Ribs on a Sunday in the Bay!

Live Action Quick Tips

Did you know….

Barbecue varies by region, with the four main styles named after their place of origin: Memphis, Tenn.; North Carolina; Kansas City; and Texas. Memphis is renowned for pulled pork-shoulder doused in sweet tomato-based sauce (eaten on its own or as a sandwich). North Carolina smokes the whole hog in a vinegar-based sauce. Kansas City natives prefers ribs cooked in a dry rub, and Texans … well, Texans dig beef. Eastern Texas’ relative proximity to Tennessee puts it in the pulled-pork camp, but in the western segment of the Lone Star State, you’re likely to find mesquite-grilled “cowboy-style” brisket. Locals defend their region’s cooking style with the sort of fierce loyalty usually reserved for die-hard sports fans. Just as you’re better off not mentioning the Yankees to a Red Sox fan, it’s probably best not to proclaim your love for Texas beef to anyone from Tennessee.

Other countries barbecue in their own style. Korean barbecue features thin slices of beef or pork cooked and served with rice. Argentina has asado, or marinade-free meat cooked in a smokeless pit. And of course, there’s Mongolian barbecue, which is neither barbecue nor of Mongolian origin but rather a type of stir-fry recently invented in Taiwan. But true barbecue is distinctly American. So this Fourth of July, when the parades have ended and the sun starts to go down, throw some meat on the grill and cook yourself a true American classic. Patriotism never tasted so delicious.(time.com)

Live Action Quick Tips

Did you know….

The word “pizza” is thought to have come from the Latin word pinsa, meaning flatbread (although there is much debate about the origin of the word).

A legend suggests that Roman soldiers gained a taste for Jewish Matzoth while stationed in Roman occupied Palestine and developed a similar food after returning home. However a recent archeological discovery has found a preserved Bronze Age pizza in the Veneto region. By the Middle Ages, these early pizzas started to take on a more modern look and taste. The peasantry of the time used what few ingredients they could get their hands on to produce the modern pizza dough and topped it with olive oil and herbs. The introduction of the Indian Water Buffalo gave pizza another dimension with the production of mozzarella cheese. Even today, the use of fresh mozzarella di buffalo in Italian pizza cannot be substituted. While other cheeses have made their way onto pizza (usually in conjunction with fresh mozzarella), no Italian Pizzeria would ever use the dried shredded type used on so many American pizzas. Tasty Grub that will Tickle your Tonsil when your Dining at Roscoe’s Chicken and Waffles!

Live Action Quick Tips

Did you know….

The earliest American chicken and waffle combination appears in Pennsylvania Dutch country during the 1600’s, when home cooks made waffles and topped them with pulled chicken and gravy. A different, decidedly soul food-inspired approach to the pairing worked its way into popular culture much later with the opening of Wells Supper Club in Harlem, New York. The restaurant, known simply as “Wells” to regulars, opened in 1938. Wells became a late night hotspot for jazz musicians, who would stop by late at night after their various gigs. The musicians, arriving too late for dinner but too early for breakfast, enjoyed the appetizing compromise of fried chicken and waffles. Before long, Wells was frequented by the likes of Sammy Davis Jr. and Nat King Cole (who held his wedding reception there).

Wells managed to inspire a nationwide trend. In 1976, a Harlem native named Herb Hudson opened a Los Angeles restaurant dedicated exclusively to the pairing: Roscoe’s House of Chicken and Waffles. Hudson’s Motown connections helped to launch the restaurant, making it a popular destination for music industry professionals and performers in the Los Angeles area. Over the years, the restaurant has become an established part of the Hollywood food landscape. Roscoe’s is so well known, in fact, that President Obama took time out of his busy schedule in 2011 to make an unscheduled stop there. In case you’re curious, he ordered the “Country Boy,” Number 9– three wings with choice of waffle, potato salad or French fries. Here’s hoping he chose the waffle.

Gladys Knight, a patron of the original Wells, started her own chain with gospel singer Ron Winan in 1996—Gladys and Ron’s Chicken and Waffles. Other soul food restaurants feature chicken and waffles on the menu, including Lo-Lo’s in Arizona and Lucky J’s in Texas. Thomas Keller’s famed restaurant Ad Hoc in Napa has been known, on occasion, to serve lemony fried chicken with crispy and delicate waffles. And in Harlem, Melba’s Restaurant serves up eggnog waffles with strawberry butter and buttermilk fried chicken. While it may sound strange, Melba’s combination is so tasty that she beat out celebrity chef Bobby Flay in a chicken and waffles “Throwdown” on Food Network.(pbs.org)

Live Action Quick Tips

Did you know….

Caribbean cuisine echoes the culinary influences of Africa, France, Spain, India, Holland and Asia; in these water-soaked, tropical locales, fresh fruits and vegetables make up a large portion of the Caribbean diet. Caribbean food includes all of your favorites; seafood, chicken and steak, prepared with the flavorful and colorful ingredients of the Islands.

The Arawak, Carib, and Taino “Indians” were the first inhabitants of the Caribbean Islands. Their daily diet consisted of vegetables and fruits such as papaya, yams, guavas, and cassava. The Taino started the process of cooking meat and fish in large clay pots. The Carib Indians introduced spices and lemon juice to their meat and fish recipes. The Caribbean Sea was named after this tribe, who are said to have prepared the first pepper pot stew.

Once the Europeans brought African slaves into the region, the Caribbean became the crossroads to the world. The slaves’ diet consisted mostly of food the slave owners did not want to eat. So the slaves had to be inventive, and they blended their traditional African foods with staples found on the islands. The Africans introduced okra, callaloo, fish cakes, saltfish, ackee, pudding and mangos, to name a few. Presently, most Caribbean Island natives eat a diet that is reflective of these main ingredients found in original African dishes.

After slavery was abolished, the Europeans went to India and China for labor, and more cooking styles were introduced. The Chinese introduced rice and mustard, and the early Portuguese sailors introduced the popular codfish. Spain introduced fruit trees such as orange, ginger, plantains, figs, date palms, sugar cane, grapes, tamarinds and coconuts, and The Americas are responsible for introducing beans, corn, squash, potatoes, tomatoes, and chili pepper. Foods served in the Caribbean islands have been influenced by the cultures of the world, but each island adds its own special flavor and cooking technique.(phillyreef.com)

Grilling at its Best for Whatever you Choose at GEN Korean BBQ…

Live Action Quick Tips

Did you know….

Bulgogi literally means fire meat — bul is fire and gogi is meat in Korean. This savory dish, typically thinly sliced beef marinated in a mixture of soy sauce, garlic, ginger, onion, sugar (or honey), sesame oil and black pepper, is grilled in front of you at the table, with sliced leeks and mushrooms. It’s served with side dishes of cooked or pickled vegetables that range from crunchy and cool to sharp, tangy and spicy.

Until recently, bulgogi was considered a celebration dish, eaten on birthdays and at weddings or served to guests. Only a couple of decades ago, in fact, a bulgogi meal was worth bragging about to friends, at least for kids.

But with South Korea’s rising fortunes, the dish has become an everyday staple, found in practically every Korean food venue, from fast-food joints to fancy four-star restaurants. “Bulgogi is easy to make and everyone can enjoy” it, says Kim Hyun-sik, a chef at Samwon Garden restaurant in Seoul. Live Action Quick Tips

Did you know….

1st Century B.C. -The first recorded sandwich was by the famous rabbi, Hillel the Elder, who lived during the 1st century B.C. He started the Passover custom of sandwiching a mixture of chopped nuts, apples, spices, and wine between two matzohs to eat with bitter herbs. The filling between the matzohs served as a reminder of the suffering of the Jews before their deliverance from Egypt and represented the mortar used by the Jews in their forced labor of constructing Egyptian buildings. Because he was the first known person to do this, and because of his influence and stature in Palestinian Judaism, this practice was added to the Seder and the Hillel Sandwich was named after him.

6th to 16th Century – During the Middle Ages, thick blocks of coarse stale bread called trenchers were used in place of plates. Meats and other foods were piled on top of the bread to be eaten with their fingers and sometimes with the aid of knives. The trenchers, thick and stale, absorbed the juice, the grease, and the sauces. At the end of the meal, one either ate the trencher or, if hunger had been satisfied, tossed the gravy-soaked bread to their dogs or given as alms to less fortunate or poor human. Alms were clothing, food, or money that is given to poor people: In the past, people thought it was their religious duty to give alms to the poor. Trenchers were clearly the forerunner of our open-face sandwiches.(whatscookingamerica.net)

The Rockin Rueben or Sandwich of your choice

Sandwiches are a staple that us Americans love to enjoy. Funny thing is not every culture even knows what it is or even how to eat one.

It can be mysterious, spooky, and a riddle to the mind.

I remember some years back when I took my wife out to get a sandwich and she had no idea how to hold a sandwich or even the proper biting styles.

All the meat and fixings kept falling out and I had to show her how to hold it. She is better now but still lacks that finesse of someone born and raised eating sandwiches and burgers.

I also saw a documentary where some tribal people in a foreign country were given hamburgers for the 1st time.

Meat between bread nearly blew their minds. You can check out that video here.

Anywho…

Oceanside is situated on the Pacific Coast named quite literally because of its location.   Its history begins in the agriculture-rich San Luis Rey Valley, which was first explored by the Spanish Explorer Portola in 1769, followed by the founding of the Mission San Luis Rey de Francia in 1798.

The Mission, with its vast fruit orchards and cattle raising activities included a large population of Native Americans. The Indians who were gathered at the Mission were called “San Luisenos” by the Franciscans, later shortened to “Luisenos.”  Indians were instrumental in building the Mission compound as they provided the labor.  Mission San Luis Rey was the largest building in California when completed and was the most prosperous of the missions, earning the name “King of the Missions.” (oceansidechamber.com)

Live Action Quick Tips

Did you know….

Chilli Chicken, Chowmein, Fried Rice with Manchurian, the list goes on… And as our mouth waters, we wonder: are these scrumptious creations Chinese or Indian? Truth be told, this newfangled cuisine coined as Indian Chinese actually exists. It’s true, it’s even featured on Wikipedia. But contrary to popular belief, it isn’t all that trendy. Desi Chinese actually dates back to a few hundred years ago created by the small Chinese community from the Hakka region that settled in Kolkata in the late 19th century. And before you knew it, this version of “Chinese” food had tickled the taste buds of people all over India adopting it in their own way, from Chinese Bhel Puri to Chinese Idli, spring rolls in canteens to momos on the streets.

So what really is Indian Chinese? Simply put, it is the Indian adaptation of Chinese cooking techniques and seasonings with a unique tadka. It’s aimed at pleasing our desi palate, with a larger offering of vegetarian dishes of course. Yes, Chinese food is the most popular foreign cuisine in India surpassing Italian or Thai. This is why a majority of restaurants dedicate a section of their menu to Chinese food. And this is not just the case in India. People across the world, especially in Malaysia, Singapore and North America, surprisingly relish this cuisine to no end (and who can blame them?).
